A bit of a throwback to the century before last when these vines produced sherry.
A long term project where hand picked Pedro Ximenez was fermented on skins and fortified with grape spirit to stop fermentation and retain natural sweetness. This was then aged slowly in old oak barrels for up a decade.
No sulphur just time. And jeebus, it’s delicious.
Aroma: Walnuts, almonds, tea and honey.
Palate: Soft, gently sweet, super long, nutty and creamy honey flavours.
Summary: Such a beautiful finish to a meal. Bring me the biscotti!
