Our 7th pet nat made from scratch using grapes from our unknown vine x variety. Aiming for a gentle fizz so not too petillant. Arguably the simplest way to make a zero added SO2 wine pet nats are becoming a style unto themselves. Reminds me of vintage with the tickle on the tongue of freshly fermented wine. One of the few wines in our line up where food is optional.
Colour: Dusty pink with lavender hues
Aroma: Musk lollies and sherbet wizzes.
Palate: Juicy and fresh, zesty finish.
Summary: I think our most successful attempt yet, bottle fermented wines are notoriously fickle but when they work my goodness it is fun.

Variety: Vine X (we don’t know for sure, once was carignan, may also be bon vedro and Mataro in the blend)

This one is made from Wayne Ahrens’ famed bonvedro vines. All biodynamic grown. Pet nat party time. Pretty and floral aromas, some cranberry and Aperol, whiffs of watermelon granita. Ultra refreshing, zingy and tightly wound with light juiciness around strongly zingy acidity and brilliant bubbles. Delicious stuff here and so invigorating. 93 Points
